The BEST healthy choc chip chickpea cookies!
Seriously, you need to try these! And if your kids are anything like mine, they won’t believe that their main ingredient is chickpeas!
Chickpeas are a great source of protein & fibre, and count as a serve of vegetables, too! The three things I’m always trying to increase in kids I see in clinic :) These are also nut-free, making them perfect for a lunchbox treat!
You’ll need:
1 tin chickpeas, drained & rinsed
1/2 whole rolled oats, blitzed to a flour
3 tablespoons olive oil
1/4 cup brown sugar
1/4 cup honey
1 teaspoon baking powder
1 cup sugar free choc chips
1/2 teaspoon sea salt
How to make them:
Pre-heat oven to 180 & prepare a tray with baking paper
In a food processor, blitz the oats & chickpeas until they are broken down & resemble a dough. You may need to scrape down the sides a few times
Add the rest of the ingredients apart from the choc chips & continue to mix until it’s all thoroughly combines
Add the dough to a bowl, & stir through the choc chips
Using a tablespoon, scoop tablespoons of dough into the tray, flattening to loosely forming cookie shape
Bake for 16 - 20 minutes, cool for a couple of minutes on baking tray before placing onto a wire rack
