Sweet Potato Brownies!

If you can add a vegetable into a sweet treat, I think you definitely should. Because who doesn’t need to eat more vegetables? These are high in fibre and protein, which means we’re adding “clothes” to our carbs for a better response to the sugars in our body

You’ll need:

1 cup roasted sweet potato flesh

1 egg

1 teaspoon vanilla

1/3 cup honey

1/2 cup peanut butter

2/3 cup almond meal

3/4 cup cacao powder

1 teaspoon baking powder


Here’s how:

To prepare the sweet potato, roast a whole sweet potato in a medium oven (160deg) for around an hour and a half. Until you can easily poke a knife through it. Let it cool, then slice it open lengthways and scoop out the flesh, discarding the skin.

Pre-heat the oven to 170 degrees & line a small baking tray, around 20cm x 25cm.

In a bowl, mix together the sweet potato flesh, honey, vanilla, egg & peanut butter.

Add in the dry ingredients and stir until combined.

Fold through the chocolate chips and pour into a lined baking tray.

Cook for around 25-30 minutes or until set. (Brownies should still be soft & a little goo-ey in the middle.)

Slice & let cool in the tray. Keeps in the fridge for around 5 days. Enjoy 😊
