Healthy Peanut Butter Choc Chip Cookies (with bonus zucchini!)
These may look ugly, but they are about-as-healthy-as-it-gets when it comes to choc chip cookies! These cookies are high in fibre, high in protein, & they even contain a bonus vegetable :)
They can easily be made dairy free by using choc chip cookies, and gluten free by replacing the oats with rolled amaranth or buckwheat.
Ingredients
1 medium zucchini, finely grated (around 1 cup)
3/4 cup coconut sugar (or sweetener of choice)
1/4 cup tapioca flour
2 eggs
1 cup natural peanut butter
1 cup whole rolled oats
1 teaspoon baking powder
1/4 teaspoon sea salt
3/4 cup choc chips
Method
Pre heat oven to 170 degrees & line a baking tray with baking paper.
In a mixing bowl, whisk together the eggs & sugar until combined. Whisk in remaining ingredients.
Using a tablespoon, scoop heaped spoonfuls of mix onto the tray, shaping into a round, & flattening slightly.
Cook for around 10 - 12 minutes.
